A collaboration between Springbrook Farms in Vermont and Crown Finish Caves in Brooklyn. This raw cow's milk alpine style cheese, is molded in Vermont, then sent to Brooklyn to be washed in brine and aged for a year.
The resulting cheese has a firm texture, smooth paste studded with crystals, a nutty rind and flavors of buttemilk and pina colada. Perfect for snacking any day of the week.
